Garden Salsa

Tis' the season for gardens overflowing with tomatoes! It's time to harvest them, give them to friends and family, and make some salsa. I did just that when I got a bunch of tomatoes from my family. Here's how I make my garden salsa. It's not an exact science and I use my judgement on how much stuff I put in it. Make it spicy or mild, chunky or smooth. You can't mess it up! Have fun with it!


Ingredients:

A bunch of tomatoes

1 green pepper

1 onion

1 lime

A bunch of cilantro

2 - 4 Serrano or jalapeno peppers depending on how hot you want it

TIP: Serrano pepper are hot, but the spice doesn't linger in your mouth like jalapenos do. Choose a pepper that's the right spice for you. Or skip them altogether if you don't like spice!












Instructions:

1. Wash the tomatoes, green pepper, and cilantro

2. Wipe off the Serrano peppers with a towel (They lose a little bit of spice if washed in water)

3. Dice most of the tomatoes (A serrated knife works best)

4. Put tomatoes in a bowl

5. Dice the green pepper (You can use 1/2 or all of the pepper depending on how much you want in it)

6. Add the green peppers to the bowl

7. Dice 1/4 or 1/2 of the onion (Depends on how much you like onions)

8. Add the onion to the bowl

9. Tear off the cilantro leaves from the stems

10. Chop up the cilantro (I used a little over 1/2 of the bunch. Again use as much or as little as you like)

11. Add the cilantro to the bowl

12. Chop up the Serrano peppers really small with half the seeds (TIP: if you have rubber gloves, wear them to chop the Serrano's. If you don't have gloves, wash your hands after cutting them and don't touch your eyes for a while. Same goes for jalapenos if you use them)

13. Add the Serrano peppers to the bowl

14. Cut the lime in half and squeeze the juice into the bowl (No worries if you don't have a citrus juicer. Just squeeze the lime into the bowl)

15. In a blender or food processor, blend the remaining tomatoes until they are liquid (If you don't have a blender or food processor, it's OK. This step is optional. I like my salsa with a little more juice to it. But there's plenty of juice from the tomatoes and limes.)

16. Add the pureed tomatoes to the bowl

17. Stir everything together

18. Grab some chips and enjoy! (Also great on tacos and quesadillas!)
